Editorial Review ************************************************* ******* Swabian Spaetzle ******* Ingredients: 250 g flour 2 eggs 1 teaspoon salt 1/8 liter of water for lubricating: 1 tablespoon butter, 1 tablespoon Weckmehl Beat these ingredients well until batter shows air bubbles. On moistened Spaetzleboard deposit a part of the dough. With scraper or knife with a long, wide blade scrape off the Spaetzle into rapidly boiling salted water. Keep water at a rolling boil. Spaetzle are done when they come up to the surface. Remove with large strainer-spoon and put in colander. Keep Spaetzle warm and repeat process until all dough is gone. Top Spaetzle with in butter browned breadcrumbs. For a richer taste substitute the water in the recipe with eggs: as many as it takes to make a heavy dough. Add 1 teaspoon oil to batter. ***************************************************
