ProductDescription : This "Kawachi White Koji-Rice malt powder-" is the result of further research into the Koji discovered by our founder Genichiro Kawachi. It has no acidity and has a strong ability to saccharify starch. Also, since it is a powder and easily soluble, it can be used to make amazake(Japanese healthy sweats) in a short time! White koji produces citric acid and is a high producer of acid protease, making it ideal for preparing meat and fish. Compared to yellow koji, it has less sweetness, so it should be used for cooking that requires less sweetness. Since it contains a lot of citric acid, amazake can be made with white koji powder to produce a refreshing amazake with a sour taste.
