You've rolled out your croissant dough to your choice of thickness, but now you need to make your pre-croissant triangles. How? Some need only a knife and a trained eye to cut out equal-sized triangles. A more guided method uses a pre-cut cardboard triangle that, placed on your croissant dough, guides your knife to cut the dough to the cardboard triangle’s measurements. Yet another method first uses a multiple-parallel-straight-edge-wheel pastry divider to mark rectangles, then a knife to cut each rectangle from corner to opposite corner, yielding two triangles.

If any of those methods are yours, you may not be apt to invest in a croissant cutter. But if speed is your priority, this roller is the answer — with each pair of adjacent blades wide on one side of the cutter but narrowing all the way to the other side of the cutter, this tool is designed to cut out triangles.
